01 / OVERVIEW

Overview

Citric acid is the most widely produced and consumed food acidulant in the world — produced industrially through aerobic fermentation of glucose by Aspergillus niger. It delivers a clean, characteristic sour taste that defines countless food and beverage products: soft drinks, juices, candies, dressings, and processed foods of every variety. Five Rivers Materials supplies citric acid in both anhydrous and monohydrate forms, with FCC, USP, and Kosher/Halal certifications on request.

Beyond flavor and pH adjustment, citric acid serves as a natural preservative (lowering pH below the growth threshold for many spoilage organisms), a chelating agent for trace metals (preventing oxidative off-flavors), and as a buffer in formulations requiring stable pH. We source from qualified producers in China — the global production center — with full origin documentation and continuous-supply contracts available for high-volume buyers.

Variants & Forms

VAR / 01

Anhydrous

Water-free crystalline form. Preferred for dry-blend applications, where moisture absorption would compromise blend stability — sauces, dressings, and beverage powders.

VAR / 02

Monohydrate

Crystalline form containing one water of hydration. Cost-effective for liquid applications where the additional water is incorporated into the product anyway.
