Overview
Ascorbic acid — Vitamin C — is one of the most chemically important food ingredients in modern manufacturing, serving simultaneously as a nutritional fortifier, an antioxidant, a color preservative, and a dough conditioner depending on the application. As an antioxidant, ascorbic acid prevents the oxidation of sensitive food components — protecting flavors in juices and beverages, preventing rancidity in fats, preserving the cured-pink color in processed meats, and stopping enzymatic browning in fruits and vegetables. As a flour-treatment agent in bakery, it strengthens gluten and improves loaf volume.
